Afterwards, the coffee is dried 7-9 days until the moisture content reaches 10-12%.

This is a beautiful washed coffee. It starts with a tart lime flavor up front. The finish has a spice reminiscent of fresh ginger. As the coffee cools slightly the acidity calms a bit to reveal the delicate sweetness of green Anjou pear juice.
